Meet Paul Traisneau

I began my culinary journey at 16, training at Henlow Grange Health Farm while attending college once a week. After two years, I qualified and worked in fine dining around Bedfordshire, earning up to AA Rosette level. In 1998, I joined the Knife & Cleaver in Houghton Conquest, a 1-star AA Rosette fish-focused restaurant. This improved my skills working with fresh seafood. I then worked in London with chefs such as Brian Turner, Turners of Walton Street, and Richard Corrigan at Lindsay House, and even had the chance to work at Gordon Ramsay's Connaught Hotel to experience Michelin-star cuisine. After this, I returned home to Bedfordshire and founded Trezys Catering in 2018. We catered private events, and weddings, and even cooked at Liverpool Football Club's hospitality suites, maintaining a Rosette standard.

 

In 2022, I became Head Chef at Elderswell in Turvey, becoming part of the Inspired Family. Cooking has been my passion since childhood, influenced by my great-grandfather, who was a chef at London's Berkley Hotel. I prioritise local produce, collaborating with local farms to feature their offerings on my menu. Making clients happy while showcasing the quality and origins of the food brings me joy.

 

In giving back to the community, I have visited local schools, including Ursula Taylor Lower in Clapham and Pittsford Lower in Northampton. There, I conducted demonstrations, shared knowledge about healthy eating, and engaged in cooking activities with the children, emphasising the importance of nutritious choices and raising awareness about hidden sugars in foods.
